Spinach Salad with Chocolate Vinaigrette
fresh spinach
scallions or sliced red onion
yellow or orange bell peppers
wild mushrooms
goat cheese or crumbled bleu cheese
toasted sunflower seeds or walnuts
For vinaigrette use 2/3 parts chocolate balsamic vinegar and 1/3 parts spicy brown mustard. Stir vigorously and it’s ready to use.
(You also may want to try replacing mustard with 1/3 parts orange juice, pomegranate juice, raspberry puree, or even olive oil to make a great dressing.)
