Old World Truffles - How to Ganache
Learn how to make hand rolled truffles the old fashioned way. This class is a low-key, relaxed 1 1/2 hour class to enjoy with friends or as a scheduled group activity. Class size 8-10 people preferred, each participant takes home what they make!

The Sweet Science of Chocolate
This is where we get to geek out about the inner workings of this delightful substance. What is polymorphism and why does it matter? How does eutectics play a part in confections? How do you say eutectics? Emulsions vs. Suspensions?? Oh My! This class is a bit more technical, and I get pretty excited about this stuff. Class size 8-10 preferred, each student gets to take his/her science project home.

Chocolates of the World - A Tasting Event
Bring a date or your mom...or your BFF. This is a laid back, fun chance to try different chocolates made from cocoa beans grown around the world. Just like wine or coffee, there are many variations of flavor profiles of cocoa beans grown from region to region. Additionally, all chocolates (with the same cocoa content) are not built the same. I challenge you to come taste the difference for yourself! Class size 10-16 preferred.

Advanced Confectionary Technique
This class is for those serious about working in the confectionary world. Please contact me through this site for more details. Class will be limited to 8 participants.
Date & Time: Monday, June 2, 2014 or Friday, June 6, 2014 at 9:00 am. $250 per person. approx 7 hours, lunch will be provided.
Chocolate for Dinner! - Incorporating Chocolate into Savory Cuisine
A wonderful dinner party, perfect for couples or Girls Night Out! We'll prepare a 5 course meal for you, with chocolate mixed into to every dish. This is an inspiring and creative culinary experience for you foodies out there. Limited to 8 people, reservation is absolutely required.
Date & Time: Saturday, April 26, 2014, 7:00 pm. $50 per person.

NOTES: These are hands-on classes! Dress with the understanding that it may get messy!
